Ingredients
2 tbsp ground coriander
1 tbsp cumin seeds
1 tbsp crushed cardamom pods
1 tbsp paprika
1 tsp chili powder (to taste)
4 cloves garlic, minced
1 inch ginger, grated
Juice of 1 lemon
3 tbsp vegetable oil
Salt and pepper to taste
Fresh herbs (for garnish)
Instructions
Prepare the Spice Blend: Toast cumin seeds until fragrant. Mix with coriander, cardamom, paprika, and chili powder.
Combine Marinade Ingredients: Add garlic, ginger, lemon juice, oil, salt, and pepper to spices; whisk into a thick paste.
Marinate: Coat your choice of meat, seafood, or veggies in the marinade. Cover and refrigerate for at least 1 hour, ideally overnight.
